Quicklime, also known as calcium oxide, plays a crucial role in the sugar refinery process due to its unique chemical properties. It is also used to purify sugar derived from other sources, such as maple or sorghum.
In sugar refineries, quicklime is used in the clarification of sugarcane juice by raising its pH level and precipitating impurities such as waxes, proteins, and other organic compounds. Excess lime is removed by carbonation or by the addition of phosphoric acid. This process may be repeated several times depending on the purity of final product required.
